Summers always calls for a good cocktail. While I love a great summer ale, gin always becomes a summer favorite for me, as well as anything with bubbles in it (bring on the champagne please!). Also, in the spring, my rhubarb, which is a perennial, is always thing to sprout up in my garden. For these reasons, when a Rhubarb Fizz Cocktail, from the blog Baked Bree, popped up on my pintrest, I had to try it! Of course, I made some alterations, and here is how it turned out for me!
Ingredients
9 oz Rhubarb syrup
8 oz Gin
1/2 cup fresh lemon juice
12 oz cold sparkling white wine
ice & lemon slices for garnish
First, make rhubarb syrup.
1 Cup Water
1 cup Sugar
1tsp vanilla (Baked Bree uses a vanilla bean, but I didn’t have any!)
1 1/4 cup chopped rhubarb.
Put all the ingredients into a small pot, and bring to a boil. Boil for 3 minutes.
Carefully strain into a jar….perhaps using a funnel, or a wider bottled jar than I did! I made a bit of a mess at first…And let you syrup chill
Finally, make your drink!
Mix the entire jar of homemade rhubarb syrup with the remaining ingredients above, and enjoy!
I found this drink to be an amazing summer cocktail! Not too sweet, and so refreshing! So maybe make an extra batch, because it certainly will not last long!
